1 pound ground beef
1 pound ground pork
1 medium onion, diced
1 bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
2 cups long-grain white rice
4 cups chicken broth
2 tablespoons Cajun seasoning
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon cayenne pepper (optional)
2 tablespoons vegetable oil
1 bay leaf
Fresh parsley, chopped (for garnish)
Instructions
In a large pot or Dutch oven, heat the vegetable oil over medium heat until shimmering.
Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened and fragrant.
Stir in the minced garlic and cook for an additional minute.
Add the ground beef and ground pork to the pot. Cook until the meats are browned, breaking them apart with a spatula, about 8-10 minutes.
Drain any excess grease if necessary.
Sprinkle the Cajun seasoning, black pepper, salt, and cayenne pepper over the meat mixture. Stir well to combine.
Add the rice to the pot, stirring to mix it with the meat and vegetables.
Pour in the chicken broth and add the bay leaf. Increase the heat to bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is tender.
After cooking, remove the bay leaf and fluff the rice with a fork.
