Ingredients

2 ripe avocados, preferably Haas
1 cup tomatillos, husked and washed
1 small onion, finely chopped
1-2 jalapeños, seeds removed
1/4 cup fresh cilantro, chopped
Juice of 1 lime, freshly squeezed
Salt to taste, preferably sea salt or kosher salt
1/2 cup Greek yogurt or sour cream (optional)
Instructions
Preheat your oven to 425°F (220°C). Spread the tomatillos on a baking sheet in a single layer and roast for about 15-20 minutes until soft and slightly charred.
Let the tomatillos cool slightly. In a food processor, combine the roasted tomatillos, chopped onion, jalapeños, and cilantro. Pulse several times to break down the ingredients.
Add the ripe avocados and lime juice to the mixture. If you're using Greek yogurt or sour cream, add it now.
Blend the mixture until chunky or smooth, based on your preference. Adjust the texture by pulsing briefly or blending longer.
Taste and adjust the seasoning with salt and more lime juice if desired. If too thick, add a splash of water or lime juice.
