A quick and healthy seafood option featuring cod fillets with a flavorful, crunchy parmesan crust, cooked to perfection in an air fryer.
Ingredients
Scale:
4 cod fillets (6 ounces each)
1 cup breadcrumbs (preferably panko)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg, beaten
1 tablespoon olive oil
Lemon wedges for serving
Chopped fresh parsley (optional) for serving
Instructions
Begin by preparing the cod fillets. Pat them dry with paper towels to ensure the coating adheres properly.
In a medium bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
In another bowl, whisk the beaten egg and olive oil together until combined.
Dip each cod fillet into the egg mixture, then coat thoroughly with the breadcrumb mixture. Press the breadcrumbs onto the fish to ensure a firm coating.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Arrange the coated cod fillets in the air fryer basket in a single layer.
Cook the cod in the air fryer for 10-12 minutes, or until golden brown and the fillets flake easily with a fork.
Once done, remove the cod from the air fryer and let it rest for a couple of minutes before serving.
