Instructions
Wash and scrub the russet potatoes thoroughly under running water to remove any dirt. You can peel them if you prefer a softer texture, but leaving the skin on adds crunch and enhances the flavor profile.
Using a waffle fry cutter or a sharp knife, cut the potatoes into waffle shapes. Aim for uniform thickness, about 1/4 inch.
Place the cut fries in a large bowl filled with cold water. Let them soak for at least 30 minutes (or up to 2 hours) to remove excess starch.
After soaking, drain the fries and pat them dry with a clean kitchen towel or paper towels.
