2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, cold and cubed
1/2 cup whole milk
1 large egg
1 teaspoon vanilla extract
1 large apple, peeled, cored, and diced (about 1 cup)

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs, about 3-5 minutes.
In a separate bowl, whisk together the milk, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry mixture and gently stir until just combined. Do not overmix.
Fold in the diced apple until evenly distributed throughout the dough.
Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1-inch thick.
Using a sharp knife, cut the dough into triangles or use a round cutter for circles.
Place the scones on the prepared baking sheet, spacing them about 2 inches apart.
Sprinkle a little sugar over the top of each scone.
Bake in the preheated oven for 15-20 minutes or until the tops are golden brown.
