  2. In a mixing bowl, combine ground meat, onion, cilantro, parsley, black pepper, salt, coriander, and cumin. Gradually add beef broth while mixing until the filling is moist but not overly wet. The broth will create that signature juicy center. Set aside, covered, to allow the flavors to meld.
