1 pound tomatillos, husked and rinsed
1/2 cup fresh cilantro leaves, packed
1/4 cup finely chopped onion
1-2 jalapeños or serrano peppers, stemmed and chopped (adjust based on desired spiciness)
2 tablespoons lime juice (freshly squeezed is best)
1 teaspoon salt (adjust to taste)
Instructions
Preheat your oven to 425°F (220°C) if you plan to roast the tomatillos for a deeper flavor.
Place the tomatillos on a baking sheet, drizzle with a little olive oil, and roast for about 15-20 minutes until they are soft and slightly charred.
Allow the roasted tomatillos to cool slightly, then transfer them to a blender or food processor.
Add the fresh cilantro, chopped onion, jalapeños or serrano peppers, lime juice, and salt to the blender.
Pulse the mixture until well combined but still slightly chunky.
