A refreshing summer dessert that combines the sweetness of ripe mangoes with chewy sago pearls, all enveloped in the creaminess of coconut milk.

1 cup sago pearls
4 cups water
2 large ripe mangoes, peeled and diced
1/2 cup coconut milk
1/4 cup sugar (adjust to taste)
1/2 teaspoon vanilla extract (optional)
Extra diced mangoes for garnishing
Mint leaves (optional)
Instructions
In a medium pot, bring 4 cups of water to a boil. Add the sago pearls and stir gently to prevent sticking. Cook for about 10-15 minutes, or until the pearls become translucent and tender.
Once the sago is cooked, drain the pearls in a fine sieve and rinse under cold water to remove excess starch.
In a blender, combine the diced mangoes, coconut milk, sugar, and vanilla extract. Blend until smooth.
In a large bowl, mix the cooked sago pearls with the mango mixture until well combined.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
Before serving, give the mango sago a gentle stir and scoop into serving bowls or glasses. Top with extra diced mangoes and mint leaves for garnish.
