Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the almond flour, cocoa powder, sugar, baking powder, and salt for the chocolate layer. In another bowl, cream the softened butter with the sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually incorporate the dry ingredients until a dough forms.
Spread the chocolate dough onto the prepared baking sheet in a rectangle, about 1/4 inch thick. Refrigerate for about 30 minutes.
Repeat the mixing process for the vanilla layer, then remove the chocolate layer from the refrigerator and spread the vanilla dough on top.
Blend the strawberries until smooth and mix the strawberry puree into the dough, then spread it over the vanilla layer.
Bake for 20-25 minutes or until the edges are slightly golden. Allow the cookies to cool before transferring them to a wire rack.
