1/4 teaspoon ground cloves
1/2 cup pineapple juice (reserved from the sliced pineapple)
1/4 cup chopped fresh mint (for garnish, optional)
Instructions
Begin by peeling the pineapple and slicing it into 1/4-inch rings. Make sure to remove the core.
In a medium saucepan, combine the granulated sugar, apple cider vinegar, water, and reserved pineapple juice. Heat over medium-high heat until the sugar dissolves completely.
Stir in the ground cinnamon, ginger, cayenne pepper, and cloves into the syrup. Allow it to simmer for about 5 minutes.
Carefully add the pineapple rings to the syrup, ensuring they are fully submerged. Reduce heat to low and let simmer for 30 minutes.
Once cooked, remove the saucepan from heat. Allow the pineapple cowboy candy to cool in the syrup for an hour.
For longer storage, process the jars in a boiling water bath for 10 minutes.
