Ingredients
Scale:
1.5 lbs ground beef
4 medium potatoes, sliced thinly
1 medium onion, diced
2 cups shredded cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of mushroom soup
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup crushed cornflakes or breadcrumbs
2 tablespoons melted butter
Instructions
In a skillet over medium-high heat, brown the ground beef along with the diced onion until fully cooked, about 5-7 minutes. Drain excess fat and season with garlic powder, onion powder, salt, and pepper. Set aside to cool slightly.
In the slow cooker, layer half of the sliced potatoes at the bottom. Spread evenly. Sprinkle half of the cooked beef mixture over the potatoes followed by half of the cream of mushroom soup. Add half of the sour cream and a layer of cheese. Repeat the layers with the remaining ingredients, ensuring the top layer is cheese.
Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. The potatoes should be tender and the cheese melted.
About 30 minutes before serving, mix the crushed cornflakes or breadcrumbs with melted butter and sprinkle evenly over the casserole. Cover to allow it to crisp up slightly.
Serve hot, ensuring each portion has a bit of the crunchy topping. Pair with steamed vegetables or a light salad.
