Instructions

  1. Season the steak generously with salt and pepper. In a skillet or on a grill, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.
  2. In the same skillet, add another 2 tablespoons of olive oil. Add the sliced peppers and onions, seasoning with salt and pepper. Sauté over medium heat for about 8-10 minutes, stirring occasionally, until tender and slightly caramelized.
  3. Preheat your oven to broil. Slice the sub rolls in half lengthwise and place them on a baking sheet. Layer the sliced steak evenly on the bottom half of each roll, followed by the sautéed peppers and onions.
  4. Top the steak and vegetable mix with slices of provolone or mozzarella cheese. Place the baking sheet in the oven and broil for 2-3 minutes, or until the cheese is melted and bubbly.
  5. Remove the sandwiches from the oven and garnish with fresh parsley or basil if desired. Close the sandwiches and serve hot.
