8 ounces of rice noodles
1 tablespoon of vegetable oil
2 cloves of garlic, minced
1 bell pepper, thinly sliced
1 cup of snap peas, trimmed
Salt to taste
1/4 cup of fresh lime juice (about 2 limes)
2 tablespoons of soy sauce (or tamari for gluten-free)
1 tablespoon of honey or agave syrup
1 tablespoon of sesame oil
1/4 teaspoon of red pepper flakes (optional)
Zest from 1 lime (for added depth of flavor)
1/4 cup of fresh cilantro, chopped
Sesame seeds
Lime wedges
Sliced green onions (for extra freshness)
Instructions
Cook the rice noodles according to package instructions, usually boiling for about 6-8 minutes until tender yet firm to the bite. Drain and set aside, ensuring they don’t stick together by tossing them with a small amount of oil.
In a small bowl, whisk together the fresh lime juice, soy sauce, honey, sesame oil, and red pepper flakes until well combined. Taste the sauce and adjust the balance of sweetness, acidity, and spice according to your preference.
In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the sliced bell pepper and snap peas to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are tender yet still crisp.
Add the cooked rice noodles to the skillet and pour the sauce over them. Toss everything together until the noodles are heated through and well coated with the sauce, about 2-3 minutes.
