8 ounces of rotini or penne pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell pepper, diced (red, yellow, or green)
1/2 cup red onion, finely chopped
1 cup black olives, sliced
1 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Drain the pasta and rinse it under cold water to stop the cooking process.
While the pasta is cooking, wash and chop the cherry tomatoes, cucumber, bell pepper, and red onion.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
In a large mixing bowl, combine the cooled pasta, chopped vegetables, black olives, feta cheese, and parsley. Gently fold the ingredients together.
