This tropical twist on the classic mojito combines the refreshing flavors of lime and mint with the rich creaminess of coconut milk, creating a drink that's both invigorating and indulgent.

1 lime, cut into wedges
2 tablespoons granulated sugar (or to taste)
1 cup coconut milk (full-fat for creaminess)
1/2 cup white rum
1/2 cup club soda or sparkling water

Instructions
In a sturdy glass, add the fresh mint leaves and lime wedges. Use a muddler or the back of a spoon to gently press down on the mint and lime to release their juices and essential oils.
Add the granulated sugar to the mixture, then muddle gently again until the sugar dissolves and blends with the mint and lime juices.
Pour in the coconut milk and the white rum, stirring well to combine all the flavors.
