Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan thoroughly to prevent sticking.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined, ensuring there are no clumps.
Add the eggs, vegetable oil, buttermilk, and vanilla extract to the dry ingredients. Mix until well combined, ensuring no lumps remain for a smooth batter.
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely in the pan before transferring to a wire rack.
Melt the chopped dark chocolate in a heatproof bowl over simmering water or in the microwave in 20-second intervals. Allow it to cool slightly but not harden.
In another bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form. Gently fold in the melted chocolate until fully combined without deflating the whipped cream.
Once the cake has cooled, slice it horizontally to create two even layers. Place one layer back in the cake pan, ensuring it's centered.
Spoon half of the chocolate mousse onto the first layer and spread it evenly. Place the second layer of cake on top, aligning it well.
Top the second layer with the remaining mousse and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Heat the heavy cream in a saucepan until just steaming but not boiling. Pour it over the chopped chocolate in a bowl and let it sit for 5 minutes to melt.
Stir the mixture until it’s smooth and glossy. Let it cool slightly before pouring it over the chilled mousse cake.
Carefully remove the cake from the pan and place it on a serving plate. Pour the ganache over the top, allowing it to drip down the sides.
Decorate with whole Ferrero Rocher chocolates and chopped hazelnuts.
