Ingredients
Scale:
1 medium head of green cabbage, chopped into bite-sized pieces
4 medium potatoes, peeled and diced into uniform cubes
1 large onion, finely chopped
2 cups sour cream, preferably full-fat
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup crushed crackers (e.g., saltines or Ritz)
2 tablespoons butter, melted
Instructions
Preheat your oven to 350°F (175°C).
In a large pot, bring salted water to a boil. Add the chopped cabbage and cook for about 5 minutes, until softened but still retaining some crispness. Drain and set aside to cool slightly.
In the same pot, add the diced potatoes and cover with water. Boil for 10-15 minutes, or until the potatoes are fork-tender. Drain and return to the pot to allow excess moisture to evaporate.
Add the cooked cabbage and chopped onion to the potatoes. Stir in the sour cream, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are thoroughly combined.
Transfer the mixture into a greased 9x13 inch casserole dish, spreading it evenly with a spatula.
In a small bowl, mix together the crushed crackers and melted butter until the crackers are evenly coated. Sprinkle this mixture generously over the top of the casserole.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbling.
Remove from the oven and let it cool for a few minutes before serving.
