2 ripe peaches, sliced
2 cups ripe tomatoes, diced (heirloom or vine-ripened recommended)
8 oz fresh burrata cheese, torn into pieces
1/4 cup fresh basil leaves, torn or roughly chopped
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar (optional)
Salt, to taste
Freshly cracked black pepper, to taste
Instructions
Start by preparing the ingredients. Wash the peaches and tomatoes thoroughly under cold water. Pat them dry with a kitchen towel to remove any excess moisture.
Slice the peaches in half, discard the pit, and cut each half into thin slices. Set them aside in a separate bowl.
Dice the tomatoes into bite-sized pieces. Consider using a serrated knife for clean cuts that prevent squashing.
In a large bowl, combine the sliced peaches and diced tomatoes gently to avoid bruising the fruit.
Drizzle the olive oil and balsamic vinegar over the fruit mixture. Sprinkle a pinch of salt and freshly cracked black pepper to taste. Toss gently to coat the ingredients evenly.
Add the torn burrata cheese to the mixture, taking care not to break it apart too much.
Finally, add the fresh basil and give everything a gentle toss. Let the salad sit for a few minutes to enhance the flavors before serving.
Serve immediately on a large platter or in individual bowls, garnished with extra basil leaves or a drizzle of olive oil if desired.
