Potstickers, also known as Chinese dumplings, are a beloved dish that has captured the hearts and taste buds of many around the world. These delightful little pockets of flavor can be filled with a variety of ingredients and are often pan-fried to create a crispy bottom, while remaining tender and juicy inside.

For the filling:
1 lb ground pork
2 cups finely chopped Napa cabbage
1/2 cup finely chopped green onions
1 tablespoon minced ginger
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon cornstarch
For the wrappers:
2 cups all-purpose flour
3/4 cup boiling water
1/4 teaspoon salt
For the dipping sauce:
1/4 cup soy sauce
1 tablespoon rice vinegar
1 teaspoon chili oil (optional)
1 tablespoon chopped cilantro (optional)
Instructions
In a large bowl, combine flour and salt thoroughly. Gradually add boiling water while mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.
In a large bowl, combine ground pork, Napa cabbage, green onions, ginger, garlic, soy sauce, sesame oil, salt, pepper, and cornstarch. Mix well until homogeneous.
Divide the rested dough into two pieces. Roll one piece into a log and cut into 10 portions. Flatten each piece into a disc about 3 inches in diameter.
Place a generous tablespoon of filling in the center of each disc. Wet the edges with water to help seal.
Pinch the edges together to fold, creating pleats around the dumpling.
Heat a non-stick pan over medium heat and add oil. Arrange potstickers in a single layer and fry for 2-3 minutes until golden brown.
Carefully add 1/2 cup of water to the pan and cover. Steam for about 5-6 minutes until the water evaporates and potstickers are cooked through.
Remove from heat and serve hot with the dipping sauce.
